A new 99-seat restaurant with a 25-seat wine bar offering fine dining, cocktails and coffee is set to open in Kamloops this spring.
Cordo Resto + Bar promises to serve as a “social landmark” in the city once it opens in April at Delta Kamloops (previously Hotel 540).
The eatery, which will feature large windows overlooking Victoria Street, is going to have its own on-site mixologists, a “nutritious grab-and-go nook” serving Starbucks coffee, a private dining room for 25 guests and plenty of lunch and breakfast options.
Delta said the restaurant’s food will follow the in-house motto of “simple, made perfect”.
There will be a combination of modern and classic cooking with the incorporation of fresh herbs, local produce and regional wines.
The decor will feature art that celebrates the surrounding region.
“The elements of Cordo will appeal to the savvy business traveller, couples and families on the go and those looking to enjoy a delectable, locally inspired meal set within a relaxed and inviting, yet intimately sophisticated atmosphere,” promised Bryan Pilbeam, the hotel’s general manager.
The name of the new restaurant derives from the word “cordillera”, which describes parallel mountain ranges with intervening plateaus.
“We felt the meaning of Cordo spoke to the unique natural elements that surround our city and provided a platform in which to showcase the bounty of our region through our fresh, culinary and cocktail creations,” said Carla Donnelly, a director at Delta Kamloops.
