A local favourite in the Kamloops food scene is spreading its wings. Details are still under wraps, but partners at the Noble Pig have announced plans to open a new concept restaurant in downtown Kamloops this summer.
"We’re about to go into our eighth year of operation here at the Noble Pig and we’ve been looking at various opportunities and different ventures for quite some time now," said partner and operations manager Maeghan Summers.
Owners have announced plans to open a new eatery in the downtown core by August 2018, but the new location and name won't be revealed until later next month. Summers said the new restaurant will be a new style of cuisine for the city.
She and her husband Jared, who is the executive chef at the Noble Pig, have worked in the hospitality industry for nearly 15 years and are excited to introduce something fresh and new locally.
"It is a different concept that the Noble Pig. We don't want to obviously over-saturate our market. One of the things we’ve always looked at doing is diversifying what we offer," Summers said.
"We’ve worked in a lot of different locations, we’ve done a lot of really cool things and we’re basically taking a blend of some of our favourites and bringing it to Kamloops."
"For us to find a location that fits within what we’re looking to do and for us to be able to stay in our community of the downtown area and have all that come together has been quite exciting, so we are super super pumped."
The keys for the new location will be in hand next month and construction will begin, with a tentative opening set for August.
"The reason why we are able to do this next project is because of the community support we’ve had." Summers said. "I’m born and raised in Kamloops and if I can stay home and do what I love, I’m a happy camper."
